Blowfly Corner

Ingredients:

1 kg

Lean chuck steak cut in 3 cm pieces

2 tbsp

Cooking spray

1

Brown onion finely sliced

½ cup

Ayam Thai curry paste

270 mls

Coconut milk

650 gms

Potatoes cooked and mashed

2 tbsp

Fried shallots

Directions:

  1. Heat oil in a frypan and brown steak in batches before placing in a pressure cooker
  2. When done add onion, curry paste, coconut milk and salt to cooker and stir well. 
  3. Put lid on cooker and cook for prescribed time for curry then thicken with a little cornflour if needed
  4. While this is happening prepare the mashed potato and pre-warm your oven or stand alone griller
  5. Place meat in an oven dish then then spread over the potato and place under grill. 
  6. Cook for 10 - 15 minutes until potato browns up a little then remove and garnish with shallots before serving.
