250gms | Minced chicken |
1 egg | Lightly beaten |
½ cup | Dried bread crumbs |
1 tbsp | Coriander leaves chopped |
Salt and pepper to taste | |
2 | Medium onions peeled & sliced |
1 | 420gm can Mexican beans |
1 | 310gms corn kernels |
4 cups | Chicken stock |
1 | Small red chillies finely chopped |
Directions:
1. Combine the chicken, egg, breadcrumbs, coriander, pepper and salt in a bowl then mix well.
2. Roll tablespoons of mix into balls to form about 12 dumplings then place on a plate and set aside.
3. Heat the oil and cook onions and chilli until soft then stir in stock, beans and corn bringing to the boil.
4. Simmer for about 15 minutes until the dumplings are cooked then serve garnished with coriander leaf.
