Ingredients
500gms | Fresh asparagus spears |
250gms | Rocket |
½ cup | Macadamia nuts toasted and roughly chopped |
1 cup | Parmesan cheese flakes |
DRESSING | |
80mls | Macadamia oil |
60mls | Orange juice |
2 tbsp | White vinegar |
1 tsp | Cracked black pepper |
1 tbsp | Peanut butter |
1 clove | Garlic finely chopped |
Directions:
1. Steam the asparagus until just tender then drain, rinse in cold water and cut into pieces 2.5 cm long.
2. Combine all the salad ingredients in a bowl and toss.
3. Place all dressing ingredients in a jar and gently shake to combine.
4. When ready to serve drizzle dressing over the salad.
