President’s Report (Jean)
  • Thank you for your understanding regarding my late arrival
  • Will send out email to members interested in purchasing a brick for Path of Memories and then will work out costings.
  • Big thank you to Stephen Hay for picking up BBQ trailer for BBQ at Path of Memories
  • Nomination forms will be given out next week for 2023/24 board members

Guest Speaker: Phil Hoffmann
Phil Hoffmann of Phil Hoffmann Travel gave an update on the travel industry following disruptions caused by COVID.  Demand is strong and has reached pre-COVID levels but the Industry is plagued by shortages of staff and airline capacity has not yet fully recovered.  At a previous talk to RCWL on this topic, Phil expected the industry could be back to ‘normal’ by 2024 but now thinks this is a bit optimistic.  The cruising sector is doing well.

Gourmet Gary’s: Slow Roast Pork Belly
Blowfly Corner
 
 
Serves: 8

Prep Time: 2 days 
Cook Time: 2 hrs 
Total Time: 2 hours 2 seconds 

Ingredients:

1 kilo

Boneless pork belly

4 tbsp

Hoisin sauce

2 tbsp

Soy sauce

2 tbsp

Oyster sauce

1 tbsp

Ginger finely chopped

2 tbsp

Garlic finely chopped

Salt to taste

 

 

Directions:

1. Mix marinade and pour into a shallow tray, placing pork on top with skin side up, be careful not to get marinade on skin.

2. Cover and refrigerate for 2 days and then score lightly.

3. Preheat oven to 150c, place pork on a rack over baking dish with 2 cms boiling water in it.

4. Sprinkle a little salt over skin and bake until meat feels soft and floppy then cut meat into slices using score marks as a guide.

5. Arrange meat in its original shape and place under a medium grill until skin is crackled all over.

6. Serve with steamed green vegetables.
