Gourmet Gary’s Slow Cooked Beef Stroganoff
Serves: 6
Ingredients
1 kg | Chuck steak cut in 4cm pieces | |
2 tbsp | Sweet paprika | |
2 tbsp | Olive oil | |
2 | Onions halved and sliced thinly | |
3 cloves | Garlic crushed | |
2 cups | Beef stock base | |
¼ cup | Shiraz | |
¼ cup | Worcestershire sauce | |
2 tbsp | Seeded mustard | |
200gms | Button mushrooms thinly sliced | |
500gms | Pappardelle paste | |
2 tbsp | Continental parsley finely chopped |
Directions:
1. Place beef in a bowl and sprinkle with 1 tablespoon of the paprika then hat oil in a pan and brown beef in 2 lots.
2. Place in a slow cooker then place onion, garlic, stock, wine sauce mustard, and rest of the paprika in the pan and bring to the boil.
3. Pour sauce over the meat in the slow cooker and cook for around 6 hours until meat is tender then remove and shred with 2 forks.
4. Return beef to the sauce then add the mushrooms then cook for an hour until they soften.
5. While this is happening cook pappardelle as per packet instructions and chop into shorter lengths.
