- thanked the Club for BBQ last September, next Open Day is planned 15 October.
- 3 remaining remnant dune systems along the Adelaide coast (Henley, Semaphore & Tennyson). Tennyson at 20 Ha is the largest, and only with a 3 dune system
- the group conducts excursions, and produces publications, check out their website

Gourmet Gary’s Mexican Bean and Chicken Soup

Cooking Time: 
 
250gms
Minced chicken
1 egg
Lightly beaten
½ cup
Dried bread crumbs
1 tbsp
Coriander leaves chopped
 
Salt and pepper to taste

Medium onions peeled & sliced
1
420gm can Mexican beans
1
310gms corn kernels
4 cups
Chicken stock
1
Small red chillies finely chopped
 

Directions:

1. Combine the chicken, egg, breadcrumbs, coriander, pepper and salt in a bowl then mix well. 

2. Roll tablespoons of mix into balls to form about 12 dumplings then place on a plate and set aside. 

3. Heat the oil and cook onions and chilli until soft then stir in stock, beans and corn bringing to the boil. 

4. Simmer for about 15 minutes until the dumplings are cooked then serve garnished with coriander leaf.
